Savoiardi

These pastries are great to accompany a tea, a hot chocolate or another creamy dessert.
Very easy to prepare are delicious and light.

INGREDIENTS

  • 4 eggs
  • 10 Gr. Icing sugar
  • 120 Gr. caster sugar
  • 1 Pinch of salt
  • 50 Gr. Flour
  • 250 Gr. Potato starch
  • 8 Gr. Vanilla yeast
  • 1 Packet of Vanillin

  • Baking paper
  • 2 large Bowls
  • 1 small Bowl
  • Electric Whisker
  • 2 teaspoons
  • Spoon

Procedure

Let’s light the oven at 180 ^ and let it heat up and, in the meantime, coat the baking paper plate.
We divide the eggs by putting the egg yolks in a bowl and the egg whites in the other.
Add the salt to the egg whites and, with the whisker, Montiamoli with Fermissima snow.
Add the icing sugar and 100 g to the yolks. of caster sugar and we work the whole thing with the whisker.
Let’s sift through all the other powders (flour, starch, yeast and vanilla) and put them in the small bowl.
Now add the egg yolks to the egg whites, also joining all the powders.
We mix everything with the spoon gently, taking the dough from the bottom and bring it to the center.
We work all the ingredients to create a homogeneous dough.
Now with a teaspoon we take the dough and using the other spoon let’s go down on the baking paper, creating sticks as wide as a finger that we will have a distance of 1 cm from each other.
Sprinkle all the biscuits of the caster sugar remaining and supply them, making them cook until they become slightly amber coloured (about 15 minutes).
Let’s give them a cool break.
They can be stored for many days if stored in a tin box.
