Pasta with Friarielli

This recipe is the result of the education received: Never throw leftovers!
In fact, every time the Friarielli remain (rarely) here is a very good way to reuse them.

Ingredients for 4 people

  • Friarielli already ready (see recipe in the outlines section)
  • 350 Gr. of Pasta (I prefer the type Tortiglioni)
  • 150 gr. grated Parmesan cheese (or Grana Padano)
  • Salt


  • Pot with lid
  • Large frying pan (or WoK)
  • Wooden Ladle


We bring the pot full of water to the boil and bake the dough, regulating salt.
Meanwhile put the Friarielli in the pan and let them heat.
We bake the dough very al dente and, after having drained it, add it to the Friarielli.
We also put the Parmesan cheese and, with the wooden ladle, shoot well, blowing all over medium flame for a few minutes.
